About Microgreens
Microgreens are young vegetable greens harvested shortly after the first true leaves appear, typically 7–21 days after germination. Although small, they can be packed with nutrients, vibrant flavors, and beneficial plant compounds.
Microgreens often contain higher concentrations of certain vitamins, minerals, and antioxidants than their mature counterparts on a gram-for-gram basis. Common nutrients include:
• Vitamin C – supports the immune system and collagen production
• Vitamin K – important for bone health and blood clotting
• Vitamin E – protects cells from oxidative damage
• Beta-carotene (Vitamin A precursor) – supports vision and immune function Folate – essential for healthy cell growth
• Potassium, calcium, magnesium, and iron (amounts vary by variety)
